    Chocolate Chip Cookie Bars

    Chocolate Chip Cookie Bars are the delicious chocolate chip cookies you know and love in a gooey bar form. They are easy to make, ready in 30 minutes, and full of chunks of chocolate that will have you coming back for more!

    A classic chocolate chip cookie is one of the better parts of life. These cookie bars have all the best parts of their cookie counterparts in a slightly thicker version. They will melt in your mouth!

    Why You'll Love This Recipe

    • These tasty bars can be ready to eat in 30 minutes. Just like my favorite Fudgy Brownies.
    • The edges of the bars are slightly crunchy while the inner pieces are gooey and melty. These Biscoff Blondies have a similar texture.
    • The cookie bars are a bit easier than regular cookies because you press all of the dough into a pan rather than scooping out individual cookies.
    • They are easy to customize by adding nuts, toffee bits, or butterscotch. Like my Butterscotch Cookies.

    Ingredient Notes

    • Measuring the all-purpose flour correctly is very important. I suggest weighing your flour out. If you want to use a measuring cup, make sure you spoon the flour into the cup and level it off with a knife. Don’t use the cup to scoop directly from the flour.
    • I prefer semi-sweet chocolate, but you can use whatever you prefer. If you’re wanting puddles of chocolate chop up a chocolate bar instead of using chocolate chips. Find the same delicious chocolate puddles in my Chocolate Chip Banana Bread!
    • Baking soda and baking powder are used to give the cookies a bit of rise and help make them tender.

    Substitutions and Variations

    • Add some cocoa powder into the dry ingredients to make chocolate chocolate chip cookie bars. Who doesn't love double the chocolate? My Nutella Stuffed Skillet Cookie also gives you a double dose of chocolate.
    • Add peanut butter to the cookie dough for peanut butter chocolate chip cookie bars. Get more peanut butter from my Almond Flour Peanut Butter Cookies.
    • Brown the butter before mixing the cookie dough for brown butter cookie bars. I also use brown butter in my Brown Butter Cookies.
    • Mix nuts into the cookie dough for some extra crunch. Pecans, walnuts, or almonds are all great options. I use pecans in my Pecan Chocolate Chip Cookies.

    This recipe has not been tested with other substitutions or variations. If you replace or add any ingredients, please let us know how it turned out in the comments below!

    Step-By-Step Instructions

    STEP 1: Preheat your oven to 350 degrees (F). Spray a 9x13 pan with non-stick spray and set aside.

    STEP 2: In a large bowl using a hand mixer or in the bowl of a stand mixer cream together the butter, granulated sugar, and brown sugar until light and fluffy.

    STEP 3: Add the eggs one at a time, mixing fully before adding the next. Pour in the vanilla and combine.

    STEP 4: In a medium bowl combine the flour, baking soda, baking powder, and salt. Whisk to combine.

    STEP 5: Add the dry ingredients to the wet ingredients and mix until just combined. Be sure not to over mix.

    STEP 6: Mix in the chocolate. Do this until just combined. If you love cookie dough you should try out my Edible Cookie Dough Recipe.

    STEP 7: Press the cookie dough into the prepared pan.

    STEP 8: Bake the cookie bars for 17-20 minutes. Bake for 5 minutes longer if you don't want the cookie bars to be as gooey.

    STEP 9: Remove the chocolate chip cookie bars from the oven and allow them to cool.

    Expert Baking Tips

    • Add chunks of chocolate on top before baking. This will give you those incredible puddles of chocolate on top of the cookie bars.
    • Use an oven thermometer. Most ovens run either hot or cold. Using an oven thermometer ensures that you are baking your bars at the perfect temperature.
    • Don’t use cold ingredients. Ensure that all of your cold ingredients are at room temperature before making your cookie bars. The ingredients will combine much easier and you won’t have chunks of cold butter in your cookie dough, which can lead to greasy cookie bars.
    • Weigh your ingredients. One of the most common baking mistakes that I see is measuring incorrectly, especially with flour. The best way to get accurate measurements every time is to weigh them with a kitchen scale.

    How do I store the cookies?

    Room Temperature: The Chocolate Chip Cookie Bars can be stored in an airtight container at room temperature for up to 5 days.
    Refrigerator:
     If stored correctly in an airtight container the bars will last up to 1 week in the fridge.
    Freezer
    : If stored correctly in an airtight container they will last up to 2 months in the freezer.

    Are these cookie bars easier to make than regular cookies?

    They are! The cookie dough doesn't need to rest like it does for regular cookies, so they are quicker, and you don't have to scoop each individual cookie.

    Ingredients
      

    For Cookie Bars:

    • 1 ½ sticks (170 grams) unsalted butter softened
    • 1 cup (198 grams) granulated sugar
    • 1 cup (213 grams) light brown sugar packed
    • 2 large (100 grams) eggs
    • 2 teaspoons vanilla extract
    • 3 cups (360 grams) all-purpose flour
    • 1 teaspoon baking soda
    • 1 teaspoon baking powder
    • 1 teaspoon salt
    • 1 ½ cups (255 grams) chocolate chopped or chocolate chips
