Brookies are a mash up of two classic desserts- fudgy brownies and chewy chocolate chip cookies. You get gooey, chocolatey brownies on the bottom and buttery, golden brown chocolate chip cookies on top for the perfect bite.

I think we can all agree the brownies and chocolate chip cookies are at the top of the desserts food chain. Combine them into one treat and you have got a home run. These brookies are fairly simple to make and are sure to be hit!

Ingredient Notes
- Cocoa Powder will amp up the flavor and make these double chocolate brownies. It also flavors my favorite Brownie Pie.
- I prefer semi-sweet chocolate, but you can use milk chocolate or dark chocolate, if you prefer. If you're wanting puddles of chocolate chop up a chocolate bar instead of using chocolate chips. If you're wanting more chocolate puddles check out my Sourdough Chocolate Chip Cookies.
- Measuring the all-purpose flour correctly is very important. I suggest weighing your flour out. If you want to use a measuring cup, make sure you spoon the flour into the cup and level it off with a knife. Don’t use the cup to scoop directly from the flour.
See the recipe card below for a full list of ingredients and measurements.
Substitutions and Variations
- Add Oreo to the cookie dough or the brownie batter for added texture and extra chocolate flavor. I also use Oreo cookie in my Oreo and Chocolate Chip Cookies.
- If you want to add extra depth to the bars you can brown the butter for the brownies, the cookie dough or both to make Brown Butter Brookies. Get more of that brown butter flavor in my Brown Butter Chocolate Chip Cookies.
- Swirl peanut butter in to the brownie recipe for some nuttiness and added richness. I use peanut butter to flavor my Almond Flour Peanut Butter Cookies.
- If you want to be eating these brookies as soon as possible with as little effort as possible you can use store bought brownie mix and cookie dough! I use brownie mix in my Brownie Mix Cookies.

Expert Baking Tips
- Add chunks of chocolate on top before baking. This will give you those incredible puddles of chocolate on top of the bars.
- Use an oven thermometer. Most ovens run either hot or cold. Using an oven thermometer ensures that you are baking your bars at the perfect temperature.
- Don’t use cold ingredients. Ensure that all of your cold ingredients are at room temperature before making your bars. The ingredients will combine much easier and you won’t have chunks of cold butter in your cookie dough, which can lead to greasy brookies.
- Weigh your ingredients. One of the most common baking mistakes that I see is measuring incorrectly, especially with flour. The best way to get accurate measurements every time is to weigh them with a kitchen scale.

Love your brownie recipe, so wanted to give the brookie a try. I have one question for the cookie part. Is it supposed to say 2 eggs on the ingredient list? The directions state to add 1 at a time, and i know chocolate chip cookie recipes usually for 2 eggs.
Ellie Haley says
No, it is just supposed to say 1! I cut my normal chocolate chip cookie recipe in half for this one and just missed the change in wording. Thank you for pointing it out!
