    Chocolate Brownie Pie

    Chocolate Brownie Pie has a flaky, buttery homemade pie crust filled with a gooey brownie batter. It is a versatile dessert that can be served warm or cold, and can be enjoyed on its own or paired with whipped cream, ice cream, or fresh berries.

    I feel like I don't need to go into a whole lot of detail about this one. Brownies are delicious. Pies are delicious. Throw the best homemade brownie recipe into a flaky, buttery pie crust and it is guaranteed to be delicious. If you like more classic brownie recipes with no crust try out my Fudgy Brownies.

    Why You'll Love This Recipe

    • The combination of the gooey deep dish brownie filing and flaky pie crust is a perfect textural contrast. You can get a similar textural contrast in my Strawberry Pop-Tarts.
    • Brownie Pie is versatile. You can add a lot of different mix-ins or toppings to change the flavor. Like this S'mores Brownie Pie!
    • You can easily simplify if, if need be. You could use pre-made pie crust wtih brownie mix from the grocery store and throw this pie together in a matter of minutes. These Snickers Stuffed Peanut Butter Cookies can also be simplified just as easily!

    Ingredients

    • Measuring the all-purpose flour correctly is very important. I suggest weighing your flour out. If you want to use a measuring cup, make sure you spoon the flour into the cup and level it off with a knife. Don’t use the cup to scoop directly from the flour.
    • The water needs to be cold. Add ice cubes until you are ready to add the water to the dry ingredients.
    • Using a high-quality cocoa powder will lead to a better overall flavor. I also use cocoa powder in my Cherry Chocolate Brownies.
    • I prefer semi-sweet chocolate chips, but you can use milk or dark chocolate. I If you’re wanting puddles of chocolate chop up a chocolate bar instead of using chocolate chips. I also use chocolate chips in my Chocolate Chip Cookies without Brown Sugar.

    Substitutions and Variations

    • If you are pressed for time you can use a boxed brownie mix and premade pie dough.
    • You can mix in different nuts, like walnuts or pecans, to add extra crunch to the brownie pie recipe. I use pecans in my Pecan and Chocolate Chip Cookies.
    • The flaky pie crust can be replaced with a graham cracker crust. I also use a graham cracker crust in this Cinnamon Roll Cheesecake.
    • You could bake mini pies in a mini muffin tin. Like in this Mini Pecan Pie Recipe.
    • Homemade or store bought caramel can be drizzled on top to further sweeten the pie. This would make the pie similar to my Caramel Stuffed Brownies.

    This recipe has not been tested with other substitutions or variations. If you replace or add any ingredients, please let us know how it turned out in the comments below!

    Step-By-Step Instructions

    STEP 1: In a medium bowl combine the flour and salt.

    STEP 2: Add the cold butter. Using clean hands work it into the flour until the texture is like breadcrumbs. There can be a few large chunks left.

    STEP 3: Slowly drizzle the cold water in a little at a time, working it into the dough. When the dough begins to clump together stop adding water.

    STEP 4: Turn the dough out onto a clean and floured surface and bring the dough together until the dry ingredients are fully incorporated.

    STEP 5: Form the dough into a disc shape and cover. Chill for at least 2 hours.

    STEP 6: Spray a pie dish with non-stick spray. Set aside.

    STEP 7: Place the dough on a clean and floured surface and begin to roll it out. The dough should be about ⅛ inch thick.

    STEP 8: Pick the dough up by rolling it around the rolling pin and then unrolling it over the pie dish. Adjust the dough so that it lays flat against the pie dish. You can cut off or crimp the edges to your liking. Use any excess pie dough to make these Pie Crust Cookies! Place the dish in the fridge while you make the filling.

    STEP 10: Preheat your oven to 350 degrees (F).

    STEP 11: In a medium bowl combine the melted butter and brown sugar. When fully combined add the eggs and vanilla. Beat until fully combined and light in color.

    STEP 12: In a small bowl combine the flour, cocoa powder, and salt. Whisk to combine and remove any lumps.

    STEP 13: Add the dry ingredients to the wet ingredients and mix until just combined. Don’t overmix or you will have a tougher brownie filling.

    STEP 14: Fold the chocolate chips into the mixture and pour into the prepared pie dough.

    STEP 15: Bake the pie for 50-55 minutes or until a toothpick inserted into the center of the pie comes out with only a few moist crumbs. Bake the pie for less time if you want the filling to be gooey.

    STEP 16: Remove from oven and allow to cool. Dust with powdered sugar or a scoop of ice cream before serving.

    Expert Tips

    • Add chunks of chocolate on top before baking. This will give you those incredible puddles of chocolate on top of the brownie pie.
    • Sprinkle the pie with flaky sea salt before serving. Salt complements chocolate perfectly and will really bring out the flavor.
    • Use an oven thermometer. Most ovens run either hot or cold. Using an oven thermometer ensures that you are baking your brownies at the perfect temperature.
    • Weigh your ingredients. One of the most common baking mistakes that I see is measuring incorrectly, especially with flour. The best way to get accurate measurements every time is to weigh them with a kitchen scale.
    • Don't overmix. You need to mix your batter until all of the ingredients are JUST combined, otherwise, you will make too much gluten and your brownie filling will be like cake instead of fudgy.

    Can I use a premade pie crust instead of homemade?

    Absolutely!

    Can I use brownie mix instead of homemade?

    Definitely!

    Can brownie pie be made ahead of time?

    Yes, it can. You can make the whole pie and place it in the fridge for up to two days before baking or in the freezer for up to two months before baking.

    Why didn't my brownie pie come out fudgy?

    You either added too much flour (this is why I recommend weighing your ingredients), over baked the pie, or mixed the filling too much. It's important to only mix enough to incorporate the ingredients, otherwise too much gluten is created and it can make the brownie pie tough.

    How do I store this pie?

    Room Temperature: It is best to store the chocolate brownie pie at room temperature in an airtight container. It is best eaten in two days, but can last up to five.
    Refrigerator:
    If stored correctly in an airtight container the pie will last up to 1 week in the fridge.
    Freezer
    : I recommend cutting the pie into slices, wrapping each in plastic wrap and freezing for up to two months.

    Ingredients
      

    For Pie Crust:

    • 1 ¼ cup (158 grams) all-purpose flour
    • ½ teaspoon salt
    • 9 tablespoons (127 grams) unsalted butter cold and cubed
    • ¼ cup ice water

    For Filling:

    • 12 tablespoons (170 grams) unsalted butter melted
    • 1 ¼ cup (226 grams) brown sugar packed
    • 2 large eggs
    • 2 teaspoons vanilla extract
    • ¾ cup (90 grams) all-purpose flour
    • ½ cup (42 grams) cocoa powder
    • 1 teaspoon salt
    • 1 cup (170 grams) chocolate chips
    • powdered sugar as needed

    • Slowly drizzle the cold water in a little bit at a time, working it into the dough. When the dough begins to clump together stop adding water.
    • Form the dough into a disc shape and cover. Chill for at least 2 hours.
    • Spray a pie dish with non-stick spray. Set aside.
    • Place the dough on a clean and floured surface and begin to roll it out. The dough should be about ⅛ of an inch thick.
    • Pick the dough up by rolling it around your rolling pin and then unrolling it over the pie dish. Adjust the dough so that it lays flat against the pie dish. You can cut off or crimp the edges to your liking.
    • Place the crust in the fridge until ready to use.

    For Brownie Filling:

    • Preheat oven to 350 degrees (F).
    • In a medium bowl mix with a hand mixer combine the melted butter and brown sugar. When fully combined add the eggs and vanilla. Beat until fully combined and light in color.
    • In a small bowl combine the flour, cocoa powder, and salt. Whisk to combine and remove any lumps.
    • Add the dry ingredients to the wet ingredients and mix until just combined.
    • Fold the chocolate chips into the batter.
    • Pour the batter into the pie dough. Bake the pie for 50-55 or until a toothpick inserted in the center of the pie comes out with only a few moist crumbs.
    • Remove from oven and allow to cool. Dust with powdered sugar before serving.
