Using brownie mix to make cookies may be one of the greatest baking hacks of all time. With very little extra effort than just mixing up a plain old box of brownie mix you can make these fudgy chocolate cookies that will have people asking you for the recipe! Ingredient Notes
- Brownie mix is the base of these cookies. You can use any type of brownie mix as long as it is 18 ounces. If you're looking for more recipes using box mixes try my Peach Cobbler with Cake Mix.
- I used olive oil, but you can use another type of vegetable oil if you prefer.
- Eggs will add moisture and help hold these cookies together.
- I prefer semi-sweet chocolate, but you can use milk chocolate or dark chocolate, if you prefer. If you're wanting puddles of chocolate chop up a chocolate bar instead of using chocolate chips. If you're wanting more chocolate puddles check out my Banana Chocolate Chunk Muffins.

Substitutions and Variations
- Roll the brownie cookies in powdered sugar before baking to get the beautiful look of crackle cookies.
- Make a quick icing to drizzle over the cookies for some added sweetness. Like the glaze I use on my Strawberry Cinnamon Rolls.
- Add more than one type of chocolate chips, like milk chocolate, dark chocolate, white chocolate, or semi sweet chocolate, to make triple chocolate brownie cookies.
- If you're a mint chocolate kind of person you can add crushed peppermint or mint chips instead of chocolate chips. I use crushed peppermint in my Peppermint Cookies.

Step-By-Step Instructions
STEP 1: Preheat your oven to 350 degrees (F). Line a baking sheet with parchment paper or a silicone baking mat.
STEP 2: In a large bowl combine all of the ingredients and mix until fully combined. The batter will be very thick.
STEP 4: Bake the cookies for 10-12 minutes or until the edges are set.
STEP 5: Remove the cookies from the oven and allow them to cool on the cookie sheet.
Expert Baking Tips
- Add chunks of chocolate on top before baking. This will give you those incredible puddles of chocolate on top of the brownies cookies from mix.
- Use an oven thermometer. Most ovens run either hot or cold. Using an oven thermometer ensures that you are baking your bars at the perfect temperature.
- Sprinkle the cookies with flaky sea salt before serving. Salt complements chocolate perfectly and will really bring out the flavor.
- Don't over mix. You need to mix your batter until all of the ingredients are JUST combined, otherwise, you will make too much gluten and your brownie mix cookies will be more like cake instead of fudgy.

For sure! This recipe has only been tested with an 18 ounce brownie mix, so I would recommend sticking with one that is also 18 ounces. But you can always take out some of the brownie mix to make it 18 ounces if need be.
The cookie dough was probably over mixed or baked for too long.

Ingredients
For Cookies:
- 1 18 ounce box of brownie mix
- ¼ cup (50 grams) olive oil
- 2 large (100 grams) eggs
- ½ cup (85 grams) chocolate chopped or chocolate chips

For Cookies:
