Cinnamon Roll Pancakes are fluffy pancakes that are swirled with a cinnamon-sugar mixture then drizzled with a sweet cream cheese frosting. They are the perfect weekend breakfast or brunch treat!

Every Saturday at my house has been dubbed Pancake Saturday. Our breakfasts during the week are usually pretty quick and healthy, just something easy to get a jumpstart on our day. But on the weekends we splurge on pancakes and more time spent together.
These Cinnamon Swirl Pancakes make their way on the menu very often! They are so delicious, indulgent, and, honestly, fun to make. I have no doubt in my mind that if you make these once you will be making them again and again.
Ingredients for Cinnamon Roll Pancakes:
Ingredients for Cinnamon Sugar Swirl:
- Unsalted Butter. I always make sure to use unsalted butter when baking because there is no “standard” for the amount of salt they can add to butter. So if you add salt to a recipe and then use salted butter you could end up with a very salty end product.
- Brown Sugar. This will sweeten the mixture and bring it together.
- Ground Cinnamon. This will add the cinnamon roll flavor to our cinnamon swirl pancakes.
Ingredients for Cream Cheese Icing:
- Unsalted Butter. See above note.
- Cream Cheese. The cream cheese needs to be very soft in order to create smooth icing.
- Powdered Sugar. This will give structure and sweetness to the icing.
- Vanilla Extract. Vanilla is a must in baked goods just like salt. Real vanilla adds a better flavor than imitation vanilla.
Ingredients for fluffy pancakes:
- All-purpose Flour. Measuring the flour correctly is very important. I suggest weighing your flour out (I use this scale). If you want to use a measuring cup, make sure you spoon the flour into the cup and level it off with a knife. Don’t use the cup to scoop directly from the flour.
- Salt. Salt is a must in baked goods. It will help to balance out the sweetness and improve the overall flavor.
- Granulated Sugar. This will add a touch of sweetness to the pancake batter.
- Baking Powder. This will help the pancakes to rise.
- Baking Soda. This will also help the pancakes to rise.
- Egg. It will be easier to incorporate the eggs into the batter if they are at room temperature.
- Unsalted Butter. See above note.
- Milk. This is the liquid that will bring our batter together.
- Vanilla Extract. See above note.
How to Make Cinnamon Roll Pancakes:
Cinnamon Sugar Swirl
Step 1: In a small bowl combine the melted and cooled butter, brown sugar, and cinnamon.
Step 2: Whisk until fully combined and thick. If the butter is too warm it will be liquidy and separate from the sugar. If this happens let it cool in the fridge for a few minutes.
Cream Cheese Icing
Step 1: In a small bowl combine the softened butter, softened cream cheese, powdered sugar, and vanilla.
Step 2: Whisk until fully combined and no lumps remain. Set aside.
Fluffy Pancakes
Step 1: In a medium bowl whisk together the flour, salt, sugar, baking powder, and baking soda until fully combined.
Step 2: In a small bowl combine the egg, butter, milk, and vanilla. Stir into the dry mixture until fully combined. There will be some lumps.
Step 3: Heat a large pan or griddle over medium heat. Use butter or non-stick spray to grease the pan.
Step 4: If you want to pipe the cinnamon sugar swirl onto the pancakes then transfer the mixture to a plastic bag and cut one of the corners off. If you don't want to use a plastic bag, then you can just spoon the mixture onto the pancakes.
Step 5: When the pan is hot scoop ¼ cup of batter onto the pan. Pipe or spoon a swirl onto the top of the pancake.
Step 6: When bubbles start to appear on the top of the pancake use a spatula to flip the pancake.
Step 7: When cooked to your liking place the pancake on a plate and top with cream cheese icing. Repeat with the remaining batter.

Ingredients
For Cinnamon Sugar Swirl:
- 4 tablespoons (57 grams) butter melted and cooled
- 6 tablespoons (80 grams) brown sugar packed
- ½ tablespoon ground cinnamon
For Cream Cheese Icing:
- 4 tablespoons (57 grams) butter softened
- 2 ounces (57 grams) cream cheese softened
- ¾ cup (85 grams) powdered sugar
- 1 teaspoon vanilla extract
For Pancakes:
- ¾ cup (90 grams) all-purpose flour
- ½ teaspoon salt
- 1 ½ teaspoon (18 grams) granulated sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 1 large egg
- 1 ½ tablespoons (21 grams) butter melted and cooled
- ¾ cup milk
- ½ teaspoon vanilla
Instructions
For Cinnamon Sugar Swirl:
- In a small bowl combine the melted and cooled butter, brown sugar, and cinnamon.
- Whisk until fully combined and thick.
For Cream Cheese Icing:
- In a small bowl combine the butter, cream cheese, powdered sugar, and vanilla.
- Whisk until fully combined and there are no lumps of powdered sugar.
For Pancakes:
- In a medium bowl whisk together the flour, salt, sugar, baking powder, and baking soda until fully combined.
- In a small bowl combine the egg, butter, milk, and vanilla. Stir into the dry ingredients until fully combined. There will still be some lumps.
- Heat a large pan or griddle over medium heat. Use butter or non-stick spray to grease the pan.
- If you want to pipe the cinnamon sugar swirl onto pancakes, then put the filling in a plastic bag with the corner cut off. You can also use a spoon to do this
- When the pan is hot add ¼ cup of batter to the pan. Using a plastic bag or a spoon, add a swirl of the filling.
- When bubbles start to appear on the top of the pancakes use a spatula to flip the pancake.
- When cooked to your liking, place on plate and top with cream cheese icing. Repeat with remaining pancakes.

Boy these were a hit. My husband loved them. I didn't make the icing because I was in a complete hurry as he was basically sitting at the table with an empty plate and a napkin tucked in his shirt. Well that's a bit of an exaggeration, but not really. I will be making these again including the icing.
