I think I might have gone too far with this S'mores Stuffed French Toast recipe. It might be too good, just too much for breakfast. Whether you think this is too much or not, it's so dang good. I'm in for chocolate anything, but add crunchy graham crackers and marshmallows?
For the ganache, you'll heat the heavy cream until boiling then add the chocolate and mini marshmallows. Let them sit for five minutes to allow them to melt a bit. Then slowly whisk until the chocolate is melted, there will still be chunks of marshmallows.
This stuffed french toast is made up of two thick pieces of brioche bread. I used a ⅓ measuring cup to press the center of one slice of bread down to allow room for the filling. You then fill then indention with the marshmallow chocolate ganache and seal the two pieces of bread together with a small amount of water on the edges. Next, you'll dip the bread into the milk and egg mixture and roll it into the crushed graham crackers. Cook the french toast until it is golden brown and you're ready to eat!

S'mores Stuffed French Toast
Ingredients
For Ganache:
- ⅓ cup heavy cream
- ⅓ cup chocolate chips
- ⅓ cup mini marshmallows
For French Toast:
- 4 slices brioche bread
- ½ cup milk
- 1 large egg
- 1 tablespoon granulated sugar
- 1 teaspoon vanilla extract
- ½ teaspoon ground cinnamon
- ⅛ teaspoon salt
- 4 graham crackers crushed
- 2 tablespoons butter
Instructions
For Ganache:
- In a small saucepan heat the heavy cream over medium heat. When the heavy cream begins to boil remove from heat and add the chocolate chips and mini marshmallows.
- Let the mixture sit for five minutes.
- Use a whisk to slowly mix the ganache until all of the chocolate has melted. The marshmallows will not melt all of the way.
- Allow the ganache to cool slightly while you prepare the bread.
For French Toast:
- Lay out the 4 pieces of brioche bread. Lightly press in the center of 2 of the pieces to make a divot. Fill the divot with the marshmallow chocolate ganache.
- Moisten the edge of the bread by dipping your finger in water and running it along the edge. Set the other pieces of bread on top and lightly press the edges to seal.
- In a shallow bowl combine the milk, egg, vanilla, cinnamon, and salt. Whisk until fully combined.
- Place the crushed graham crackers on a shallow plate.
- In a large saucepan heat the butter over medium-high heat.
- Carefully dip the stuffed bread into the milk mixture and transfer it to the plate with the crushed graham crackers. Cover the stuffed bread with the crushed graham crackers.
- When the pan is hot place the stuffed bread in the pan and cook for about 2 minutes on each side, or until golden brown.
- Top the french toast with any left over marshmallow chocolate ganache and serve warm.

Marshmallow Chocolate Ganache
- First, in a small saucepan (I use this one) heat the heavy cream over medium heat until lightly boiling.
- Remove the pan from heat and add the chocolate chips and mini marshmallows. Allow to sit for five minutes.
- Next, use a whisk to slowly stir the mixture together until the chocolate is fully melted. The mini marshmallows will not fully melt.
- Let the ganache cool slightly while you prepare the bread.
S'mores Stuffed French Toast
- Lay out 4 pieces of brioche bread. You can use whatever type of bread you like, but I just love the slight sweetness and texture of brioche. Lightly press in the center of two of the slices of bread to make a divot. Fill the divot with the marshmallow chocolate ganache.
- Moisten the edges of the bread by dipping your finger in water and running it along the edges. Place the other slices of bread on top and lightly press the edges to seal.
- In a shallow bowl combine the milk, egg, vanilla, cinnamon, and salt. Whisk until fully combined.
- Place the crushed graham crackers on a shallow plate.
- In a large saucepan melt the butter over medium-high heat.
- Carefully, so that the chocolate doesn't fall out, dip the stuffed bread into the milk mixture and transfer it to the crushed graham crackers. Cover the bread with the graham crackers.
- When the pan is hot place the stuffed bread in the pan and cook for about 2 minutes on each side, or until golden brown.
- Top the finished french toast with any extra marshmallow ganache.
