Lemon Brownies are a bright and fun twist on classic fudgy brownies. You get the chewy texture of brownies with the refreshing lemon taste. The lemon glaze on top gives these fudgy lemon brownies an extra citrus punch!
Preheat your oven to 350 degrees (F). Spray an 8x8 pan with non-stick spray and then lay thick strips of parchment paper across the bottom of the pan in a cross shape.
In a medium bowl combine the melted butter and sugar.
When fully combined add the eggs, vanilla, lemon zest, and lemon juice. Beat until fully combined and light in color.
In a small bowl combine the flour, baking powder, and salt. Whisk to combine and remove any lumps.
Add the dry ingredients to the wet ingredients. Mix until just combined.
Pour the batter into the prepared pan and spread evenly. Bake the brownies for 25-27 minutes. Remove from oven and allow to cool while you make the glaze.
For Lemon Glaze:
Combine all of the glaze ingredients in a small bowl and whisk until fully combined and free of lumps.
Pour the glaze over the cooled lemon brownies recipe and spread evenly.
Notes
Don't over mix. You need to mix your batter until all of the ingredients are JUST combined, otherwise, you will make too much gluten and your brownies will be more like cake instead of fudgy.
