All the cozy apple pie flavor, none of the fuss! These Mini Apple Pies in a Muffin Tin bake up into buttery, two bite treats with a warm cinnamon apple filling and flaky crust. I use a mini muffin tin to make a big batch of little pies that bake quickly, cool fast and are perfect for parties, lunch boxed, and "just one more" moments.
9tablespoons(126 grams) unsalted butterchilled and cubed
¼cupice water
For Apple Pie Filling:
2applesdiced
¼cup(53 grams) light brown sugarpacked
½tablespooncornstarch
½teaspoonapple pie spiceor cinnamon
1tablespoonunsalted butter
Instructions
For Pie Dough:
In a medium bowl combine the flour and salt.
Add the cold butter. Using clean hands work it into the flour until it is a coarse texture with a few larger chunks.
Slowly drizzle the cold water in a little bit at a time, working it into the dough. When the dough begins to clump together stop adding water.
Turn the dough out onto a clean and floured surface and bring the dough together until the dry ingredients are fully incorporated.
Form the dough into a disc shape and cover. Chill for at least 2 hours.
For Apple Pie Filling:
In a medium bowl add the diced apples, brown sugar, cornstarch, and cinnamon or apple pie spice. Toss until the apples are fully coated. Allow to sit for five minutes.
Melt the butter over medium heat in a large saucepan. Add the apples and all of the juices that have released from the apples.
Cook the apples for about 10 minutes or until the apples are tender and the sauce has thickened.
Assemble Mini Apple Pies:
Preheat oven to 350 degrees (F).
Place the dough on a clean and floured surface and begin to roll it out. The dough should be about ⅛ of an inch thick.
Use a small circle cutter about 2 inches in diameter. Press the dough rounds into a mini muffin tin or into the bottom of a regular muffin tin.
Scoop about 1 tablespoon of apple pie filling into each prepared pie shell. Top with a round of pie dough, lattice strips, or a crumble, if desired.
Bake for 18-20 minutes or until the filling is set. Remove from oven and allow to cool completely before removing from pan.
Notes
Work the pie dough as little as possible. You don't want to knead the dough, you just want to combine it. Working the dough too much will make it tough and brittle instead of flaky.
