Roasted Berry Yogurt Parfaits

Layers of yogurt, granola, and roasted berries make up these delicous and healthy parfaits.

Ingredients

For Berries:

  • 2 cups mixed berries
  • 2 tablespoons (25 grams) granulated sugar

For Parfaits:

  • 4 cups yogurt any flavor
  • 1 cup granola
  • 2 cups roasted berries
  • honey as needed

Instructions

For Berries:

  • Preheat your oven to 425 degrees (F).
  • Place the berries in a pie plate or a shallow baking dish and sprinkle with the sugar. You can use more or less sugar depending on how sweet you want the berries to be.
  • Roast the berries for 15-20 minutes or until the berries are soft and the liquid they release is thickened.
  • Remove from oven and allow to cool completely.

For Parfaits:

  • You will need 4 small jars or 2 medium jars.
  • Spoon a layer of the yogurt into the bottom of the jars. Next, add a layer of granola then another layer of yogurt. Top with roasted berries and then start the process over until the jars are filled.
  • Top with honey if desired. Chill until ready to eat.
