Roasted Berry Yogurt Parfaits
Layers of yogurt, granola, and roasted berries make up these delicous and healthy parfaits.
Servings: 4 parfaits
- 2 cups mixed berries
- 2 tablespoons (25 grams) granulated sugar
- 4 cups yogurt any flavor
- 1 cup granola
- 2 cups roasted berries
- honey as needed
Preheat your oven to 425 degrees (F).
Place the berries in a pie plate or a shallow baking dish and sprinkle with the sugar. You can use more or less sugar depending on how sweet you want the berries to be.
Roast the berries for 15-20 minutes or until the berries are soft and the liquid they release is thickened.
Remove from oven and allow to cool completely.
You will need 4 small jars or 2 medium jars.
Spoon a layer of the yogurt into the bottom of the jars. Next, add a layer of granola then another layer of yogurt. Top with roasted berries and then start the process over until the jars are filled.
Top with honey if desired. Chill until ready to eat.
