Preheat your oven to 425 degrees (F). Line a baking sheet with parchment paper or a silicone mat. Set aside.
In a large mixing bowl, combine the flour, baking soda, baking powder, and salt. Whisk to get rid of lumps.
Add the cheese and bacon and mix until well combined.
Make a well in the center of the bowl and pour the melted butter and buttermilk into it. Using clean hands, mix the ingredients until the dry mixture is wet. Be sure not to knead the dough. If the dough feels too dry add small amounts of buttermilk.
Turn the mixture out onto a clean and floured surface. Pat the dough into a disk about 1 ½ inches thick. Using a sharp knife or a bench scraper cut the dough into 8-10 equal triangles.
Place on baking sheet and brush with melted butter or leftover bacon grease. Bake for 12-15 minutes or until lightly brown.
