Oatmeal Date Bars

A smooth date filling sandwiched between two layers of a crumbly oatmeal mixture

Ingredients

For Bars:

  • 1 cup (149 grams) dates pitted and chopped
  • ½ cup (113 grams) water
  • ¼ cup (50 grams) granulated sugar
  • 1 cup (120 grams) all-purpose flour
  • 1 cup (213 grams) brown sugar packed
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • cup unsalted butter melted and cooled
  • 1 egg white

Instructions

For Bars:

  • Preheat oven to 350 degrees (F). Spray a 9-inch square baking pan with non-stick spray, then cut two strips of parchment paper and lay in a cross shape on the bottom of the pan. Set aside.
  • In a small saucepan add the chopped dates, water, and sugar. Place over medium-high heat and bring to a boil with stirring constantly. Turn the heat to low and allow the mixture to simmer, while constantly stirring, until thickened, about 5 minutes.
  • In a large bowl, combine the oats, flour, brown sugar, baking soda, and salt, whisk until combined. Add the melted butter and egg white, stir until fully combined.
  • Press half of the oat mixture into the bottom of the pan. Spread the date mixture evenly over the bottom layer. Crumble the rest of the oat mixture over the top.
  • Bake for 20-25 minutes. Cool before removing from pan and slicing.
