Pie Crust Cookies

These pie crust cookies are made from leftover pie dough brushed with melted butter, sprinkled with cinnamon sugar, and baked until crispy

Ingredients

For Pie Dough:

  • any pie dough scraps
  • 4 tablespoons butter melted
  • 1/3 cup (66 grams) granulated sugar
  • 2 teaspoons ground cinnamon

For Dip:

  • 1 cup (113 grams) powdered sugar
  • 1 teaspoon vanilla extract
  • 3 tablespoons milk

Instructions

For Pie Dough:

  • Preheat the oven to 350 degrees (F). Line a baking sheet with parchment paper or a silicone mat. Set aside.
  • Gather all of your pie dough scraps. If the dough is too warm you can place it in the fridge for a few minutes.
  • On a clean and floured surface roll the dough out to about 1/8 inch thick. Use a sharp knife or a pizza cutter to cut the dough into strips about 1 inch wide and 2 inches long.
  • Place the strips on the prepared pan and rest in the fridge for 15 minutes.
  • Combine the sugar and cinnamon in a small bowl.
  • Brush the strips with melted butter and sprinkle with the cinnamon sugar mixture. Flip the strips over and repeat.
  • Bake the strips for 20-25 minutes or until the dunkers are golden brown. Remove from oven and allow to cool.

For Dip:

  • In a small bowl combine all of the ingredients.
  • Whisk until fully combined.
