Soft and Chewy Brownies

I am not sure how my blog has made it this long without a regular brownie recipe?? These Soft and Chewy Brownies are here to set this straight. I am a big brownie lover (although, I’m not sure who isn’t). I like brownies to be really soft and chewy, not too cakey, and not too gooey. These brownies are right in the middle!

These brownies have chunks of chocolate in them that add the perfect little pools of chocolate throughout, because a brownie can NEVER have enough chocolate. When the brownies are cooled these chocolate chunks add a bit of a crunch.

Soft and Chewy Brownies

Classic soft and chewy brownies with chunks of chocolate

Ingredients

For Brownies:

  • 12 tablespoons (170 grams) unsalted butter melted
  • 1 1/4 cup (266 grams) brown sugar
  • 2 large eggs
  • 2 teaspoon vanilla extract
  • 3/4 cup (90 grams) all-purpose flour
  • 1/2 cup (42 grams) cocoa powder
  • 1 teaspoon salt
  • 1 cup (170 grams) chocolate chopped

Instructions

For Brownies:

  • Preheat oven to 350 degrees (F). Spray a 9-inch square pan with non-stick spray and then lay thick strips of parchment paper across the bottom of the pan in a cross shape.
  • In a medium bowl mix with a hand mixer combine the melted butter and brown sugar. When fully combined add the eggs and vanilla. Beat until fully combined and light in color.
  • In a small bowl combine the flour, cocoa powder, and salt. Whisk to combine and remove any lumps.
  • Add the dry ingredients to the wet ingredients and mix until just combined.
  • Fold the chocolate into the mixture and pour into the prepared baking dish.
  • Bake the brownies for 20-25 minutes depending on how firm you want the brownies to be.
  • Remove from oven and allow to cool.

Soft and Chewy Brownies

  1. Preheat your oven to 350 degrees (F). Spray a 9-inch square pan (I used this one) with non-stick spray and then lay thick strips of parchment paper across the bottom of the pan in a cross shape. This will make it much easier to remove the finished brownies from the pan.
  2. In a medium bowl mix with a hand mixer (I used this one) combine the melted butter and brown sugar. When fully combined add the eggs and vanilla. Beat until fully combined and light in color.
  3. In a small bowl combine the flour, cocoa powder, and salt. Whisk to combine and remove any lumps.
  4. Add the dry ingredients to the wet ingredients and mix until just combined. Don’t overmix or you will have a tougher texture to your end product
  5. Fold the chocolate into the mixture and pour into the prepared baking dish. You can use chocolate chips if you want to, I use chopped chocolate because I like the larger chunks.
  6. Bake the brownies for 20-25 minutes depending on how firm you want the brownies to be.
  7. Remove from oven and allow to cool.
