Roasted Tomato Salmon

At my house, that means a delicious piece of salmon served alongside a glass of wine. Enter: this Roasted Tomato Salmon. A perfectly tender piece of salmon topped with cherry tomatoes that have been roasted with olive oil, garlic, and fresh herbs.

What ingredients do I need?

  • Cherry tomatoes
  • Olive oil
  • Garlic

Let’s make Roasted Tomato Salmon!

Roasted Tomatoes

Step 1: Preheat your oven to 450 degrees (F). Line a rimmed baking sheet with parchment paper or a silicone baking mat. Set aside.

Step 2: In a medium bowl combine all of the ingredients and mix until the tomatoes are fully coated. If there is a lot of excess oil you can pour it out before adding to the baking sheet.

Step 3: Pour the tomatoes on the prepared pan and bake for 10-15 minutes or until the tomatoes are very soft.

Step 4: Remove from the oven and set aside while you bake the salmon.

Step 5: Lower the temperature of your oven to 425 degrees (F). Line a baking sheet with parchment paper or a silicone baking mat. 

Step 6: Place the salmon on the prepared pan. Sprinkle the paprika and cayenne pepper evenly over the salmon.

Step 7: Add your desired amount of fresh cracked black pepper on top.

Step 8: Place in the oven and bake for 10-15 minutes. 10 minutes for a more rare salmon, and 15 for it to be cooked through.

Step 9: Remove from oven and top with the roasted tomatoes. Serve the Roasted Tomato Salmon immediately with a glass of Stemmari Grillo!

Roasted Tomato Salmon

Ingredients

For Tomatoes:

  • 1 cup cherry tomatoes cut in half
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 tablespoon fresh thyme
  • 1 tablespoon fresh rosemary
  • salt to taste
  • pepper to taste

For Salmon:

  • 4 4-ounce salmon filets
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper
  • fresh cracked black pepper as needed

Instructions

For Tomatoes:

  • Remove from the oven.

  • Place the salmon on the prepared pan. Sprinkle the paprika and cayenne over the salmon.
  • Add your desired amount of fresh cracked black pepper on top.
  • Place in the oven and bake for 10-15 minutes. 10 minutes for a more rare salmon, and 15 for it to be cooked through.
  • Remove from the oven and top with roasted tomatoes. Serve immediately.
