Roasted Berry Yogurt Parfaits

Roasted berries are going to be my summer obsession, so be ready to see more of them! It is such a simple step but roasting the berries adds a great depth of flavor. I’ve been throwing roasted berries in anything I can get my hands on and they have never failed to make the recipe even better. These Roasted Berry Yogurt Parfaits are no exception!

These parfaits are perfect for breakfast or dessert. They are made with layers of yogurt, granola, and roasted berries. To bump up the health factor on these parfaits I used Liv Bars for the granola layer. These bars are major allergen-free, packed full of superfoods, and (one of the best parts) the packing is totally compostable! BIG win for the earth and your body with these bars, folks!

To roast the berries you need to cut up any larger berries and put them in a shallow baking pan, I use a pie dish for this. Then you sprinkle them with some sugar, this is to help in pulling out of those sweet juices out of the berries, and roast them at 400 degrees (F) for 15-20 minutes. Simple and delicious!

Roasted Berry Yogurt Parfaits

Layers of yogurt, granola, and roasted berries make up these delicous and healthy parfaits.

Ingredients

For Berries:

  • 2 cups mixed berries
  • 2 tablespoons (25 grams) granulated sugar

For Parfaits:

  • 4 cups yogurt any flavor
  • 1 cup granola
  • 2 cups roasted berries
  • honey as needed

Instructions

For Berries:

  • Preheat your oven to 425 degrees (F).
  • Place the berries in a pie plate or a shallow baking dish and sprinkle with the sugar. You can use more or less sugar depending on how sweet you want the berries to be.
  • Roast the berries for 15-20 minutes or until the berries are soft and the liquid they release is thickened.
  • Remove from oven and allow to cool completely.

For Parfaits:

  • You will need 4 small jars or 2 medium jars.
  • Spoon a layer of the yogurt into the bottom of the jars. Next, add a layer of granola then another layer of yogurt. Top with roasted berries and then start the process over until the jars are filled.
  • Top with honey if desired. Chill until ready to eat.
