Bacon Cheddar Scones

I know these are called scones, but this recipe comes out a lot more like biscuits. These Bacon Cheddar Scones are rather dry but so delicious and flavorful. I find them best served with honey or butter or both!

I love making scones because they are quick and easy and I get to work the dough with my hands, which always makes it more fun. These scones are the perfect breakfast add-on. They are versatile and go well with anything.

Course: Breakfast
Cuisine: American
Keyword: bacon, cheddar, cheesecake, scones

Ingredients

For Scones:

  • 3 cups (360 grams) all-purpose flour
  • 1/4 teaspoon baking soda
  • 1 1/4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup shredded cheddar cheese
  • 1 cup crispy crumbled bacon
  • 10 tablespoons (141 grams) butter, melted
  • 1/2 cup buttermilk, more as needed

Instructions

For Scones:

  • Preheat your oven to 425 degrees (F). Line a baking sheet with parchment paper or a silicone mat. Set aside.
  • In a large mixing bowl, combine the flour, baking soda, baking powder, and salt. Whisk to get rid of lumps.
  • Add the cheese and bacon and mix until well combined.
  • Make a well in the center of the bowl and pour the melted butter and buttermilk into it. Using clean hands, mix the ingredients until the dry mixture is wet. Be sure not to knead the dough. If the dough feels too dry add small amounts of buttermilk.
  • Turn the mixture out onto a clean and floured surface. Pat the dough into a disk about 1 1/2 inches thick. Using a sharp knife or a bench scraper cut the dough into 8-10 equal triangles.
  • Place on baking sheet and brush with melted butter or leftover bacon grease. Bake for 12-15 minutes or until lightly brown.

  4. Make a well in the center of the bowl and pour the melted butter and buttermilk into it. Using clean hands, mix the ingredients until the dry mixture is wet. Be sure not to knead the dough. If the dough feels too dry you can add small amounts of buttermilk until the consistency feels right. It shouldn’t be sticky.
  5. Turn the mixture out onto a clean and floured surface. Pat the dough into a disk about 1 1/2 inches thick. Using a sharp knife or a bench scraper (I used this one) to cut the dough into 8-10 equal-sized triangles.
  6. Place the scones on the baking sheet (you might need two) and brush with melted butter or leftover bacon grease. Bake for 12-15 minutes or until lightly brown.
